*how to use ground spices and infuse aromatics
Teaching focus: creating base soup, extracting flavor without heaviness; aromatic layering
Second Course:
Sambal salad with shaved fennel, coconut and mango, with a jaggery vinaigrette
Learn:
*how to open and use fresh coconut
*how to use alternative sugars (jaggery)
Third Course :
Sri Lankan Black Pepper Shrimp + with classic curry
served with lemon basmati rice
Learn:
*classic red curry
*how to spice seafood
*how to cook perfect basmatic rice
Teaching focus: spice blooming, sauce refinement, plating a traditionally rustic dish in an elegant way
Fourth Course:
Rasberry Coconut Milk Panna Cotta
Sri Lankan palm drizzle
Learn:
*multiple uses of coconut milk and cream
*how to use whole palm sugar as a natural sweetener
Teaching focus: adapting Sri Lankan flavors into classic European pastry technique
